'Pick me Up' - You can make Tiramisu too

Tiramisu

This delicious coffee lovers dessert comes from Italy, Tiramisu literally means 'pick me up' or 'cheer me up'..always a lovely end to a meal.  This is such a great desert to make for dinner parties as you can do it the day before and it tastes even better.  Obviously freshly brewed coffee tastes best!

INGREDIENTS

Serves: 6

  • 3 eggs (separated)
  • 500 grams mascarpone cheese
  • 150 grams caster sugar
  • 1 pinch of salt
  • 200 grams savoiardi biscuits (sponge fingers)
  • 500 millilitres coffee (whichever is your favourite out of our blends)
  • 200 grams grated dark chocolate 
  • 1 tablespoon cocoa powder

METHOD

  • Mix two egg yolks with the sugar till you have a very clear cream.
  • Beat three egg whites with a pinch of salt until stiff.
  • Gently fold the mascarpone cheese in the sugar/yolks cream and then add
         carefully the egg whites.
  • Spread some of the cream mixture on a tray and start making layers: dip the
         biscuits into the coffee and put them on the tray placing them next one
         another, spread some creme mixture  on them and then a handful of grated
         chocolate.
  • Go on this way until the biscuits are all over your dish.
  • Cover the last layer with the cream mixture and dust with the cocoa powder
  •  

    Keep it in the fridge for at least a few hours but overnight is even better, take it out about 20 mins before serving.
